Sweet Potato and Carrot Soup #ChakraDiet

Ingredients: (Use organic if possible)

 

  • 4 sweet potatoes, peeled and chopped 
  • 4 carrots, peeled and chopped
  • 1 onion, chopped
  • 1 inch garlic, roughly chopped
  • 1 garlic, minced
  • 3 cups vegetable broth
  • 1 tsp turmeric 
  • salt and pepper
  • cinnamon (optional)
  • raw pepitas (optional) 
  • coconut milk (optional)
  • salt and pepper 

 

Directions:

 

  1. Put olive oil in a pot on medium high heat. Add in onions and sauté for five minutes. Add  ginger, and garlic and stir for another minute.
  2. Stir in carrots, sweet potatoes, turmeric, salt and pepper. Mix well. 
  3. Add in broth and bring to a boil Lower the temperature to a simmer and cover the pot for 15-20 minutes.
  4. The vegetables should be soft. Place batches into the blender or using an immersion blender, blend until smooth. If you need be, you can add more water to the mixture. 
  5. Return to the pot to warm through or serve as is.
  6. Finish off with pipitas, dash of cinnamon and 1 tsp of coconut milk.
